I'd call this pasta as my VIRGIN as this is the first fettuccine I cook. As well this is the first recipe I posted on blog. It tastes yummy! I discovered this dish where I shop at my local the Coles supermarket. I bought the spices and it come together with recipes. Let's explore the ingredients and the steps of cooking it. so simple and quick. It was our last Saturday lunch.
chicken & tomato fettuccine
serve:4
400g of chicken breast (substitute with eggs)
400g fettuccine
1 lemon
2 tbsp pine nuts
1/4 cup finely grated parmesan cheese
Gourmet Garden Garlic, Basil & Oregano

1/3 cup light olive oil
250g halved grape tomatoes
Step 1:
Combine the juice 0f 1 lemon, 2 tbsp pine nuts, 1/4 cup finely grated parmesan cheese & Gourmet Garden Garlic, Basil & Oregano in a food processor. Process until roughly chopped.
With motor running, add 1/3 cup light olive oil & blend mixture to a smooth paste.
(Instead of process them in the food processor, I cook in low heat for couple o f minutes then add 1/3 cup light olive oil & blend mixture to a smooth paste. )
Step 2:
Cook hard-boiled eggs. Or
Brush 400g of chicken breasts with olive oil & season to taste. In large frying pan cook chicken for about 8 minutes on each side, until brown & cooked through. Set aside to rest before slicing.
Step 3:
Meanwhile, cook 400g fettuccine in large saucepan of boiling salted water accordingly to directions on pack. Drain & toss with sliced chicken, 250g halved grape tomatoes & enough sauce to coat pasta.
Serve sprinkled with parmesan if desired.
